White Chocolate Chunk Blondies

A rich, gluten free cookie/brownie desert featuring white chocolate and loads of brown sugar!

  • 2-1/4 cup gluten free cup for cup flour
  • 2-1/2 tsp baking powder
  • 3/4 cup salted butter, softened
  • 1-3/4 cup packed brown sugar
  • 3 large eggs
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 8 oz white baking chocolate


  1. Preheat oven to 350 degrees.

  2. In large bowl mix flour and powder and stir to combine.

  3. In separate mixing bowl, cream together butter and sugar.

  4. Add eggs, egg yolk, and vanilla to creamed sugar and mix until well combined.

  5. Slowly add flour mixture to wet mixture until well incorporated.

  6. Place white chocolate pieces in ziploc bag, and break into small chunks using meat grinder.

  7. Add chocolate to batter and stir by hand to mix.

  8. Place in greased 9x13 pan, and cook for 25 minutes.
